Pork with baby bok choy and sweet potato
2 pork chops
Small head bok choy, sliced
1/4 cup of onion, sliced or diced, your choice
2 cloves of garlic – give or take – I love my garlic
Medium Sweet potato
Most of my frozen vegetable buying has been limited to broccoli because most companies put extra ingredients in with their veggies.
I found a frozen roasted sweet potato with no additional ingredients. It’s pretty much the only reason I was able to put
together a delicious meal on grocery shopping day ;).

I keep seasoned pork chops in the freezer so I threw two on the Nuwave (they still come out juicy after being frozen).
Bonus if you find some funny faces along the way…
Sautee the garlic and onion in a bit of grass-fed butter. Add the baby bok choy and cook until desired doneness, I like mine a little crunchy.
Found a few faces in the sweet potato too…
That’s it! Put it all together. Delicious, healthy meal in about 20 minutes.
